IMO90 Syrup is a functional prebiotic syrup derived from starch (e.g., corn, tapioca) through enzymatic conversion and refining processes. It contains ≥90% isomaltooligosaccharides (IMO) by dry matter, with α-1,6 glycosidic bonds as the primary structure. Key properties include:

  • Low sweetness: ~30-40% sweetness of sucrose, suitable for low-calorie formulations 
     
  • High stability: Resists high temperatures (up to 120°C) and acidic conditions (pH 3.0-8.0), ideal for baked goods and beverages.
  • Prebiotic function: Selectively promotes Bifidobacterium and Lactobacillus growth, improving gut health
  • Moisture retention: Enhances texture in baked goods and confectionery by delaying starch aging
