Polydextrose is a d-glucose polymer made from glucose, sorbitol and citric acid,
which is heated to a molten mixture in a specific proportion and condensed in vacuum.
Polydextrose is an irregular polycondensation of d-glucose, mainly by 1, 6-glucosidine bond binding,
with an average molecular weight of about 3200 and a limit molecular weight of less than 22,000.
The average degree of polymerization was 20.
Polydextrose is a water-soluble dietary fiber alias. White or off-white solids, soluble in water, solubility of 70%, 10% aqueous solution of the PH value of 2.5-7.0, no special taste, is a kind of health functional food components, can add the human body needs water-soluble dietary fiber.
