It is a mixture of bagasse trisaccharide, bagasse tetrasaccharide and bagasse pentasaccharide,
which are formed by the combination of 1-3 fructose groups and fructose groups in sucrose through β (2-1) glycosidic bond.
There are about 60-70 grams of inulin in 100 grams of dry weight Jerusalem artichoke.
Fructose-oligosaccharides (FOS), is also know as Fructo-oligo,
it directly enters into large intestine without being digested and absorbed by human body, and in intestine
it rapidly promotes reproduction of bididobactirium and other probiotics, so it is also called "Bifidus Factor"calorie-reduced foods.
Fructooligosaccharides also increase calcium absorption in the body, an important consideration for pre- and post-menopausal women, ages 45 and older, who are losing critical bone mass that increases their risk for osteoporosis and bone fractures
